For years and years I (Spice) have been travelling to Alabama to spend Thanksgiving with my mother's side of the family. When I was younger, each year I would beg my grandmother to let me help her make this special dish. After much practice and wonderful guidance, I was finally able to perfect it myself, and was continuously asked to bring "my" Cranberry Apple Crunch to the table for Thanksgiving (as well as to many other family gatherings because it's THAT delicious). My brother will ask for this dish at least once a week when I'm home, and actually had me send him off to college with two (doubled) pans! What's great about this creation is that it can be eaten as a side, a dessert, or even for breakfast (You can also substitute a few ingredients and make it a healthier plate). I hope y'all enjoy this fabulous and warm recipe as much as we do!
What You'll Need:
- 3 Red Delicious Apples (peeled and diced)
- 3 cups frozen (or if in season, fresh) cranberries
- 2 Tbs flour
- 1 cup sugar
- 3 packets of Cinnamon Spice Oatmeal
- 3/4 cup pecans
- 1/2 cup dark brown sugar
- 1/2 cup flour
- 1/2 cup butter
Preheat the oven to 350 degrees.
In a large bowl, mix together the peeled and chopped apples, the cranberries, the 2 Tbs. flour and the sugar. Coat a 9 x 13" glass casserole pan with non-stick cooking spray and place the apple mixture in the bottom. In another large bowl, mix the oatmeal, pecans, dark brown sugar, flour and butter until well combined. Crumble the pecan mixture evenly over the apple mixture and place into the oven. Bake for 45 minutes (but start checking around 35 minutes to make sure the top isn't burning). Serve warm (cold is good too though) with vanilla ice cream for dessert, greek yogurt for breakfast, or with any home cooked meal :)
